New recipes

This weekend I made three new dessert recipes and would recommend them all! The first was a no-bake cookie dough bar. It is delicious! The only thing I would change is to use half of the bag of chocolate chips for the topping instead of the full bag (the full bag makes a fairly thick top layer that can be a bit hard to bite through). My advice: cut small pieces, they're rich!

The second was a blueberry-rhubarb crumble. We found a rhubarb plant growing in our new yard, pulled it out, cut it up, washed it and froze it. This is the first recipe we've used it in and it is one I will definitely save and make again!

Last, I tried a cupcake recipe. I read about it on Huffington Post and looked it up on a few other sites as well, even Betty Crocker thinks this is a good one!. You take a box cake mix, mix a can of soda (your choice!) with it and bake as directed. That's it. It's supposed to be super moist. Myself, Patrick and my brother Pat all agreed they tasted like regular cupcakes, just extra moist. Maybe even a little more dense. I will probably try this one again with different cake/soda combinations!

Stats

We finally made it in for Aubrey's two month check and she's doing great! She is 2.5 months old, weighs 14.5 pounds and is 24.5 inches long! Doc says she is looking great and we'll check in again at four months. Even though she received four vaccination shots today (which she handled like a trooper!), you couldn't keep the smile off of her face, or her fingers out of her mouth! :)

Emily: "Mom, I don't like the way you talk to me when I'm being sassy"

Me: "Well I don't like when you are talking sassy"

Emily: "oh, that's interesting"

Yes Emily, it is. It is interesting.

First week of summer as a threesome

Emily, Aubrey and I are going to be spending three days a week together for the summer and we had a lot of fun during week one! We began summer break with a bang by going to see an Anna/Elsa show at the Hard Rock Cafe at the Mall of America. It was an activity through the Twin Cities Kids Club and Emily had a great time!

On Tuesday Emily began an eight week session of gymnastics. This is the first session that she is doing the gymnastics without a parent with her and she did great! She loved being there, loved her teacher and loved showing off everything she remembered since last time. We can't wait to see what next week brings!









After gymnastics we spent time in the sprinkler to help cool off in the heat! 









Last, we spent a rainy Thursday at the library and playing indoors. 





It was an interesting first week learning how to balance the needs of both kids. It was a fun week though and I'm looking forward to the rest of the summer!

Soccer

For the past two months Emily has been playing soccer at preschool once a week. She's had a great time and the last day was celebrated with a scrimmage and a skills presentation. Her next session will start in just a couple of weeks and we're all looking forward to it!

New skills

Last weekend, we spent time with Emily at Home Depot learning how to use some new tools. On the first Saturday of every month, Home Depot has a kids class to construct something. Last Saturday it was a toy truck and Emily's turned out great! We are looking forward to next month's project!
